Soft and Chewy Oatmeal Chocolate Chip Cookies

With oats, butter, and mostly all brown sugar, you are guaranteed a soft and chewy oatmeal cookie. Use this perfect oatmeal cookie as the base for other add-ins such as raisins, dried cranberries, and nuts. Cinnamon and a touch of molasses add that little something extra. These are the best oatmeal chocolatelii chip cookies!
Ingredients
- 1 and 1/2 cups (188g) all-purpose flour (spoon & leveled) use 2h
- 1 teaspoon ground cinnamon (optional). USE 2 heaping t
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks; 230g) unsalted butter, softened to room temperature at
- 1 cup (200g) packed light dark brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs, at room temperature USE 3 EGGS. Use 4 egg
- 1 Tablespoon unsulphured or dark molasses* = 20grams
- 2 teaspoons pure vanilla extract (it’s in the raisins)
- 3 cups (240g) old-fashioned whole rolled oats
- 1 and 3/4 cups semi-sweet chocolate chips*l. 9 ounces
- 1 c raisins
350º 13-14 minutesl
MIXER
- MIXER. Butter and sugars
- When “creamed” add room temp eggs One at a time. Beat 2 minutes after each
- Add 1 Tablespoon molasses (don’t measure. Just estimate. Sticky spoons are wasteful.
FLOUR BOWL:
- Blend flour, cinnamon, salt, baking soda
OATMEAL BOWL - 3 generous cups
TO MIXER BOWL
- Add soaked raisins (vanilla is already with raisins)
- Add 1/ 2 flour bowl
- Mix barely
- Add chocolate chips
- Mix barely.
- add rest of flour bowl
- Add oatmeal
- Mix
- DONE
350º 13-14 minutesl
